Where it All Began
In the heart of New Mexico, back in the 1600s, a tapestry of cultural heritage began to unfold with the Ortiz family. They were part of a robust caravan of 15 Spanish families, all seeking new beginnings. Paula Marie Escudero, a proud 12th generation descendant, carries this rich legacy within her, a history that flavors every meal she prepares.
Her culinary journey began at her mother's elbow, a self-taught maestra of the kitchen. Her repertoire? A symphony of traditional foods - beans, chile, tortilla, enchiladas, natillas, posole, carne adovada, arroz, empanadas, biscochitos and beyond. Each dish was a melody of flavor, each recipe a verse in the family's epic poem. Paula's mom, RoseMary Ortiz Wickard, was more than just a cook; she was a culinary storyteller, weaving narratives of love and legacy with every delicious meal and dessert she prepared.
When Paula ventured to Salt Lake City, Utah for college in 1982, she found herself yearning for those familiar, comforting flavors of home. So, she donned the apron and learned directly from her mom and aunts, carrying forward her family's culinary legacy.
In 1986, a new chapter began for Paula. The birth of her first child sparked an idea – a historical family cookbook. This was more than just a collection of recipes; it was a treasure trove of family history, a testament to generations of culinary creativity. Paula sought wisdom from her great aunts, learned forgotten recipes from her mother, and collected over 150 traditional recipes, each one a thread in the fabric of her family's history.
Fast forward to 2011, Paula's passion for cooking led her to culinary school. And in a twist of fate, her second son Sean decided to join her. It was there that he discovered his own culinary prowess, blossoming into an extraordinary chef, just like his mother.
Thus, Smokin 'Good Bistro was born. A place where the past and present blend harmoniously. This is not just a food business; it's a love letter to generations of culinary brilliance.
